I'll second what the review above, except that being from Central California I'll say that real men use Red Oak!

As a city barbecue champion and as a Texan I am a huge bone-in fan. On top of adding flavor, bone-in allows for better doneness control and helps lock on juices. On another note, propane and charcoal are for city slickers. Real men use pecan.
